This añejo Tequila was made with blue agave, using the Fabrica de Tequilas method of cooking the piña with steam in autoclaves for 10 hours. A special yeast is added to the agave juices prior to fermentation, before Rooster Rojo anejo is double pot distilled in stainless steel pot stills and aged in oak.
