Prosecco Treviso, Della Vite

Della Vite Prosecco Treviso DOC displays ripe apple, jasmine, lavender and a touch of peach on the nose. Beneath the creamy mousse, the palate perfectly mimics the aromatics, coupled with the addition of grape sorbet, juicy pear, toasted sourdough bread and rich tea biscuit notes. That subtle autolytic character – the bakery nuances normally associated with Champagne – and the fine bubbles occur because the wine receives an extended second fermentation period of around 60 days, which is much longer than most Prosecco, allowing it to take on some of that yeasty flavour and rich creaminess.
